Fruit Bisque Soup
 
On Saturday we had our dear friends Josh and Rachel over for one of our regular little dinner parties. It wasn’t anything fancy due to the fact we spent a good part of the week in the hospital but it was a nice little outdoor grilling time. There is just nothing that perks us up like Josh and Rachel. Seeing the fact that Isaac has a restricted diet after the hospital I had to plan the menu accordingly.
    •    Grilled salmon with a pinch of salt and a lot of lime juice
    •    Fruit Bisque Soup
    •    Corn on the cob
    •    Cheese and broccoli rice that Rachel brought
    •    Sweet tea
The meal was yummy and the soup was a smash hit. So here’s my recipe.
 
    •    2 small cantaloupes
    •    2 mangos
    •    1 package fresh strawberries
    •    1 cup pineapple -fresh is best but canned is fine too
    •    Fresh mint
    •    Sour cream
    •    4 c. water
    •    1/2 c. sugar
    •    1 1/2 TBS minced garlic
    •    Lemon
    •    Lime
    •    Orange
Slice cantaloupes in half long ways to make 4 bowls (get as fancy as you want). Remove meat and chop into chunks, leaving the bowls aside to use later. Chop all fruit. In lrg pot add 1 1/2 Tbs. minced ginger (this is where the magic happens) cook about 2 minutes, stirring often. Add fruit and a little bit of lemon, lime and orange zest.  Cook another couple minutes on about med high heat. Add 4 c. water and 1/2 c. sugar, juice from half of the lime, lemon and orange and  bring to a simmer. Remove from heat and LET COOL. Cooling is important or you will have a blender explosion like I usually do. I am always impatient and always have a mess to clean up. Once your fruit soup has cooled add in batches to your blender and blend till smooth. Pour pureed soup into a large bowl and add remaining fruit. Chill until nice and cold. When you’re ready to serve pour into cantaloupe bowls, add a dollop of daisy (sour cream), a sprig of mint and I always and a strawberry top for flair. Serve nice and cold.
 
NOTE: The sour cream sounds weird but is crazy tasty so make sure and don’t skimp! You can also use any fruit you want.
 Today I am pouring the leftovers into popsicle molds and having super tasty, super healthy popsicles for us all.
