Want a new recipe? I made Pepsi Chicken last night and it was really good. It’s funny because I’m not a pop drinker but I like how the carbonation makes the meat so tender and gives an oh so slight sweetness to the meat. My friend Domenica gave me the idea and unfortunately I couldn’t remember how she made it so I made my own version.
• 2 liter Pepsi
• boneless, skinless chicken breasts or strips
• ketchup
Place chicken in crock pot, add enough Pepsi to cover the meat. Stir in 1 c. ketchup. I cooked mine from frozen 3-4 hours on high. Heat oven to 350 and cover baking sheet with foil. Place chicken on baking sheet and make sauce.
Sauce = equal parts of Pepsi and Ketchup. ( I add pepper and garlic powder too).
Baste chicken with sauce and bake until sauce absorbs or until it looks nice and “baked”. Remember your chicken is already fully cooked, you are just giving the meat a nice baked look and texture. (I don’t like the way the crockpot leaves it slimy).
I like to serve this with smashed potatoes, honey gingered carrots and don’t forget to have a bowl of your sauce on the side in case your family likes it extra saucy like mine.
